THE wild mushroom season of 1995 was, without doubt, the best I have known for a great number of years.

Never before, have I picked as many, cooking them in every way I know. During the height of the season, hardly a dish I prepared excluded mushrooms.

People who are uncertain regarding what type of mushroom's to gather and fail to seek information on them, simply do not know what a delicacy they are missing.
