A KANGAROO fillet, emu with seafood, alligator and ostrich are just a few of the international dishes being offered at a Burnley Hotel to combat the beef scare.

Rosehill House Hotel was taken over eight months ago by Jacquie and John Doherty and with them they brought head chef Stephen Kershaw.

Stephen, who has been a chef for 12 years, admits he likes to try different meals and menus and when the beef crisis began three weeks ago he started adding more unusual meals to the menu.

He said: "We wanted to create something that is a little bit different and it has certainly been a talking point.

"Quite a lot of people have been asking us about the meals and have thoroughly enjoyed them when they have given them a go."

The hotel's Dugdales restaurant, named after the original 19th century mill owner, is currently serving pan fried kangaroo escalopes served with a tangy devilled sauce and fillet of emu with fresh seafood coated in a blue cheese sauce.

Stephen said: "Kangaroo fillets taste like a chicken and beef cross and is cooked similar to lamb or beef. Emu is very meaty in taste, not gamey, and looks like a turkey breast it is very low in cholesterol and very tender.

"The hotel also Aberdeen Angus steaks, but with the public feelings toward beef we decided to introduce a different flavour to the menu and it is proving popular. The first week we sold out!"
