Baked Bean and Vegetable Flan (Serves four to six)
THIS recipe is exceptionally simple and costs less than one pound to make, so go and open a can of beans right now.
Pastry Ingredients
100g plain flour
pinch salt
25g lard
25g margarine
Water
Flan Ingredients
25g margarine
100g carrots, diced
100g onions chopped
2 eggs
450g can baked beans
Sprinkling dried thyme
Salt and pepper
Making the pastry case
SIFT the flour and salt together
Rub in the lard and margarine until the mixture resembles fine
breadcrumbs
Add sufficient water to mix to create a manageable dough.
Roll out on a lightly floured surface and use to line a 20 centimetre/eight inch flan case.
Making the filling
MELT the margarine and fry the carrots and onions until the onions are soft, the leave on one side to cool. Beat the eggs, stir in the baked beans, add thyme to taste and season generously. Stir in the cooled vegetables and pour the mixture into the pastry case
Cooking the flan
BAKE in the oven 190 C/ gas 5 for approximately 45 minutes until firm to the touch.
