PRESTON's butcher shops are being targeted by environmental health officers in a bid to highlight new regulations and an annual licensing scheme.
The council's food safety unit staff are making people aware of the regulations, which deal with unwrapped raw meat and ready-to-eat foods, which come into force in November.
The meat targeted by the regulations includes poultry, farmed game bird meat, rabbit and wild game meat.
Affected premises will have to apply for a £100 licence as of November. Not possessing a licence will be an offence.
To get a licence, businesses must:
comply with food safety, general food hygiene and temperature control, Regulations, 1995.
ensure food handlers are trained in hygiene to required standards.
have one person with HACCP procedures and make sure HACCP procedures are in place.
Butchers who only deal with raw red meat, and catering premises such as restaurants, are exempt from the guidelines. For more information on the regulations, call 906163.
