Ingredients: 150g lean back bacon rashers; 1 ready made; fresh garlic bread loaf; 1 tomato, thinly sliced; 1 mushroom, thinly sliced; 1 spring onion, finely chopped; 25g low-fat cheese, grated; 1/2 tsp dried mixed herbs
Preheat the oven to 200c/400f/ gas mark six. Cut the bread into the marked slices and place on a baking tray. Arrange the slices of tomato, mushroom and onion on the bread.
Cut the bacon slices lengthways and place 1/2 rasher on each bread slice. Sprinkle with cheese and herbs. Place in a preheated oven for 10 minutes or until the bacon is cooked and the cheese has melted.
