TRY-OUT a tasty Limonesco Sorbet.
Ingredients:
250g (10oz) castor sugar
150ml ( pint) water
I bottle Limonesco, well chilled Lemon zest and mint to garnish
PLACE the sugar and water in a medium sized saucepan and place over a low heat. When the sugar has completely dissolved, turn up the heat and bring the mixture to the boil.
Reduce the heat and allow to simmer very gently for about 10 minutes, stirring the syrup from time to time and ensuring it does not begin to brown.
Remove from the heat and allow the syrup to cool.
When cooled, add the chilled Limonesco, stir well and transfer to a freezer-safe container.
Place in the freezer for an hour.
When the mixture begins to thicken and turn slushy, take it from the freezer and beat well with a whisk.
Return it to the freezer and allow it to fully set for several hours until firm.
Place scoops of sorbet in a tall glass, garnish with lemon zest and mint sprigs (if desired) and serve immediately.
