A RICH chocolate dish for those who don't need to watch their weight is on the menu this week.

Nigel Smith, who prepares a recipe each week for Lancashire Evening Telegraph readers, has created Chocolate Fondant with Vanilla Ice Cream -- a simple but mouthwatering sweet.

Ingredients:

4oz flour

200g chocolate

75g butter

4 eggs

125g sugar

Method:

WHISK eggs and sugar together until thick and foamy. Fold in melted butter, chocolate and flour.

Lightly butter and flour a small tin or ramekin and pour in the mixture. Cook for 12 minutes at 200C (400F) for 12 minutes. Serve with vanilla ice cream.
