this week, with HELEN COLLEY, 36, pudding maker whose Farmhouse Fare, was named New Business of the Year
HOLIDAY: We used to go to Llandudno at the end of May for a week and stay in a farmhouse or bed-and-breakfast. I remember eating packed lunches and sitting on the beach.
HOME: I lived on a farm near Preston. My father worked on his parents' farm and I was brought up helping my grandmother to cook. When I was five we moved to Gisburn.
JOB: Waitressing at The Cottage Restaurant in Gisburn, where Mike and Linda Farnsworth, who are still there, taught me all about food preparation.
CAR: A little turquoise Peugeot with bright orange seats. It was hideous but at the time I thought it was wonderful.
AMBITION: To have a cafe.
HERO/HEROINE: Hero, Donny Osmond; heroine, a woman called Lavinia who used to come from London to do the catering when I was 14 and used to help with shooting parties at Gisburn Park. She was the Nigella of her day. I remember she made a chocolate roulade -- if you had a trifle then you were lucky! Food has changed tremendously since and Lavinia was my inspiration, that was how I got my ideas.
PET: A Jack Russell called Ben.
RECORD: Puppy Love by Donny Osmond.
PUDDING MADE: It would have been something like an apple pie when I was a child. I was brought up to bake with my family and we used to make our own pies and cakes.
PUDDING MADE FOR SALE: Chocolate fudge cake. We used to make 200 a week.
MILLION: Still working on that one! But we are working towards our one millionth pudding and the aim is to identify where it goes and offer the person who buys it six months' supply of puddings.
