A GLOBETROTTING father-of-three who has visited 25 different countries wants to share tastes from all over the world with his home town.
Matthew Mayman, 33, of Briar's Croft, Wilpshire, has travelled the world and spent two-and-a-half years in Australia, collecting flavours to fulfil his dream of opening a delicatessen.
Matthew, an ex-pupil of the former Notre Dame secondary school, spent four years in Tanzania as a child and believes he picked up the travel bug from his Blackburn-born parents, who married in Peru.
He and his wife Michelle have combined travel with parenthood -- they now have children aged five, three and six months. Two of them have already visited other continents.
Now Matthew is hoping to make his dream of owning a international food store a reality by opening a deli in Fleming Square, Blackburn. The store has been a dream since he studied on a catering course when he worked in a bakery after leaving school.
Matthew, who now has dual citizenship of Britain and Australia, said: "I think travel is in my blood. My wife and I spent a lot of time travelling round 25 countries before we decided to move to Australia. But after a few years we got homesick and decided to head back.
"A lot of the food we'll be selling reflects the influences of various places we've been. There's a lot of stuff from Italy, where we've spent a lot of time, and many Asian influences, inspired by the delis in Sydney.
"I'm hoping that being surrounded by food from all over the world will stop me wanting to take off for a while. I need to make a good go of this business before I go anywhere else."
The Chilli Lime deli, is the final shop to be let in the Exchange Arcade, which has benefited from more than £500,000 of investment.
The final phase of regeneration of Fleming Square is currently under way, with landscaping work to create a more attractive public space.
