A new eatery, known for its breakfast options and sandwiches, is set to open in Burnley next month and the woman in charge says rising energy and vegetable costs won’t get in her way.

Jackie Jackson is set to open a sandwich bar, at the Lancashire Digital Technology Centre on Bancroft Road, at the start of April.

It will be similar to Jackie’s flagship eatery, Bullough’s Sandwich Bar and Eatery, in Accrington.

The 52-year-old said: “I was asked to open a site here as the current owner has left due to electricity costs.

“I am going to give it a go because I really think the potential and there are a lot of staff members near the site.

“Those in charge came over to look at how I am running Bullough’s. They’ve had my food and must obviously like me.”

Jackie says her business, like many others in the country at the moment, is feeling the impact of the cost of living crisis and vegetable shortages. She said it won’t stop her from expanding her business.

She said: “We are struggling a bit with the vegetable crisis. It’s just the price of everything. Our tomatoes used to be £6.99 but they are now £16.

“I like to pile things on my sandwiches and we are having to cut back a little bit now.

“With the current climate I am nervous but I think our food is good enough. We are also decently priced.”

Jackie’s Accrington business has survived the pandemic and many other pitfalls since she opened nearly eight years ago.

She said customers consistently return for the quality food and service.

Jackie, from Accrington, said: “Customers must love our food because we cook everything from scratch using some of our own recipes.

“We also have a new special every day. Our staff are also really bubbly and get the customers smiling.

“We also provide quick service.”

As well as breakfast items, sandwiches and daily specials such lasagne and fish and chips, will be served to customers.

Jackie’s daughter, Alannah Gibson, will be managing the site while Jackie splits herself between locations.

Alannah, who owns online business ‘ABC - Alannah’s Bakes and Cakes’, will be bringing her sweet treats and bakes to the eatery.

Jackie said: “People are excited for her brownies she uses good ingredients, such as real Belgian chocolate and free range eggs.

“We are really excited and looking forward to opening – we just hope we get the support of all the surrounding businesses now.

“We can’t wait to meet all of our customers.”
