East Lancashire pub and fine-dining venue, The Three Fishes, has unveiled its new seasonal menu – and it looks like a seafood-lover’s dream.
Under the leadership of chef and owner, Nigel Haworth, the ‘farm to fork’ Mitton venue will be serving customers some mouth-watering dishes using local ingredients.
Appropriately given its own name, the fine dining venue has picked two types of fish to get the ball rolling.
Hot on the heels of the restaurant’s signature cheese rolls, customers will be served a starter of British langoustine and scallop ravioli with a shellfish sauce, salted chicory and seaweed.
An intermediate dish of salsify tempura with morels and rice will follow before the main course of red venison loin with tamarind sauce, barbecued yellow beets, pickle, thyme, shallots and spinach is served.
An optional cheese course comprising a selection of British and Irish cheeses at a surcharge of £15 follows, before the meal is rounded off with a passionfruit and banana soufflé with coconut ice cream and an Eccles cake.
The menu has also been adapted to suit those for wishing to enjoy a purely plant-based meal, with confit onion rolls and parsley pesto preceding a starter of butternut squash ravioli with smoked lettuce sauce, salted chicory and seaweed,
The intermediate course and pudding remain the same as on the main menu but instead of red venison, yellow beets are the focus of the main course.
The restaurant, which opened in November 2021, runs a farm-to-fork project, growing much of its own produce and sourcing the best that the shire has to offer.
“But when it comes to shellfish, landlocked Lancashire is at a disadvantage,” said Nigel, “so our langoustines and scallops are coming from Scotland.
“They are superb and mean that, come what may, there will be fishes on The Three Fishes’ menu.”
The seasonal menu costs £50 per person at lunch and £65 at dinner and there is also the option to add a wine flight for £45 per person.
This comprises wines specially chosen by a sommelier to complement the food, including guest wines not usually on offer.
