A NEW shop which says it offers coffee lovers the ‘perfect brew’ has opened.

Siphon Espresso and Brew Bar coffee shop has set up on Rawtenstall’s famous cobbled Bank Street.

The coffee shop’s owners say they focus on brewing coffee in new and novel ways.

They say they use slow filter systems, which produce coffee to order with meticulously measured coffee-to-water ratios to ensure the perfect brew is created.

Part-owner Scott Moore, who has worked in the hospitality industry for over 20 years including for a time at Costa Coffee setting up new shops, said: “When we found the location in Rawtenstall we knew it would be perfect.

“We saw the beautiful shop front and just knew we could create something that would fit in.

“It’s a great town and the high street is very much made up of independent businesses, something we were keen to home in on,” he said.

Scott, who is from Manchester, added: “It’s really important to us to ensure that everything is perfect in the shop and at the moment that means throwing everything we’ve got into training staff and making sure it’s all working smoothly.”

Food options are also available with the coffee shop selling a range of snacks and sandwiches, including vegan cakes.

The shop, which was the former home of Weale and Hitchen estate agents, can seat up to 35 people and is open every day.

Scott said the shop was trying to create a laidback atmosphere and that it was important to get everything from the music to the surroundings just right.

Scott added: “We want to ensure that the shop is an inviting environment for everyone who wants to come in.

“We have people coming who just want to sit down and work for a couple of hours, and we also have people who come in for gatherings.”

Siphon is open seven days a week from 7.30am to 5.30pm.
