HOW I agree with Malcolm Greenhalgh. His article on Lancashire food (LT, December 9) reminded me of the proper meals mum would make after the war. As a little girl we enjoyed traditionally cooked food.

Dad was employed at the tripe manufacturers in Albert Street, so we ate tripe, trotters, cowheel, nutritious and cheap.

These days it's ready meals along with take-aways. All convenience foods which personally I do not enjoy, preferring to cook my own, using a gas hob and oven.

Most people rely on a microwave. It makes me wonder if the younger generation know how to bake and are introduced to Lancashire recipes as they grow up .

So many ingredients are available and at reasonable prices. The extra time taken cooking your own is satisfying and enjoyable.
